Fun and Tasty Outdoor Grilled Chicken Methods

These tasty BBQ Chicken Recipes are simple and flavorful. These different chicken-grilling methods will tantalize the taste buds.

BBQ chicken normally takes some time to cook. Due to the length of time chicken takes to cook, direct cooking over the heat source is not normally recommended. With the first recipe, direct cooking over the heat source is the exception, not the rule. For those who like to hover over the grill, this first recipe is perfect.

The second recipe is a more American traditional BBQ method of grilling chicken using indirect heat. For those who like to put the food on the grill and leave it alone, this second recipe just what the doctor ordered.

Guamanian Style Chicken on the Grill

This chicken recipe from Guam will create a nice glaze on your chicken that’s out of this world. Because of cooking time chicken usually needs to be cooked with indirect heat to prevent burning. Not with this recipe, the constant dipping allows the chicken to simmer in the marinade and cool enough not to burn using direct heat. For added flavor dip your chicken into the dipping sauce while you eat it. In Guam the dipping sauce is called Finadene. Try some Guamanian Red Rice, a great complement with this recipe.

Ingredients:

8-fresh chicken pieces, rinsed

Marinade

  • 2 cups soy sauce
  • 1 large onion diced
  • 2 large lemons quartered
  • 1 tablespoon garlic
  • Donne peppers to taste (optional)
  • Salt & pepper to taste

Dipping Sauce (Finadene)

  • ½ cup of soy sauce
  • ¼ cup of lemon juice
  • ½ medium onion diced
  • Donne peppers to taste

Directions:

  1. For the marinade mix all ingredients in a large ceramic or steel bowl, squeeze lemon pieces into bowl and add lemon skins to bowl for marinade. Crush and add peppers to marinade if desired. Donne peppers are hot and if anyone in the party doesn’t like spicy foods, don’t add the peppers to the marinade. Dip chicken pieces in marinade and place chicken on hot grill set on high using direct heat.
  2. Remove chicken from grill every 3-4 minutes and dip into marinate to completely coat chicken pieces. Repeat dipping chicken into marinade every 3-4 minutes until done. If flare up occurs remove chicken from grill and place in marinade until flare up subsides. Thoroughly cook chicken, usually 45 minutes to 1 hour. Chicken should have an internal temperature of 170 degrees.
  3. Dipping Sauce. Add all dipping ingredients and mix. Crush peppers in sauce and remove stems. These peppers are extremely hot so be careful. They can usually be found in the Oriental section of your grocery store. Dip chicken into sauce as you eat it.

Simple BBQ Chicken Recipe

This is a traditional American style BBQ recipe that’s simple and delicious. The majority of cooking time is the indirect heating method to insure the chicken doesn’t become charred.

Ingredients

  • 8-fresh chicken pieces, rinsed
  • 1 cup favorite BBQ sauce
  • Garlic powder to taste
  • Salt & pepper to taste

Directions:

  1. Sprinkle chicken with garlic powder, salt and pepper to taste. Set grill to indirect heat. If using a gas grill, turn off middle burners. If using a charcoal grill, set charcoal to the side of the grill, leaving an empty space in the middle for chicken. Grill chicken over direct heat, turning once for approximately 5 minutes on each side or until grill marks appear. Place chicken over indirect heat with grill lid closed for approximately 1 hour at 300 degrees, turning once.
  2. Check chicken internal temperature, chicken should have internal temperature of 175 degrees and chicken juices should run clear. Add BBQ sauce and continue cooking chicken for 10 minutes turning once.
