Find out the secret to BBQ tender and succulent pork spare ribs every time. Two mouth watering recipes with a sweet or a spicy rub, both are absolutely delicious.

It’s all about the rub. Barbequing pork ribs without a rub is like eating a hamburger without the meat. Besides adding some spice to the ribs, a rub will help to lock in the natural juices for a more tender rack of ribs. The first rub recipe is a spicy rub for those who like it a bit of a spicy bite. The second rub recipe is more in the Kansas City tradition of a sweet rub.

The Secret to Tender BBQ Grilled Pork Spare Ribs

The biggest secret for tender, fall off the bone pork spare ribs is slow cooking, using indirect heat. Grilling pork ribs over direct heat will often char the meat and create a dry tasteless rack of ribs. When BBQ grilling pork spare ribs, the ideal temperature for slow cooking ribs would be around 225 degrees Fahrenheit. A rack of pork spare ribs would take about 4 hours to cook at 225 degrees.

BBQ Grilled Pork Spare Ribs Ingredients and Instructions

2 racks pork spare ribs – about 5 pounds each rack

Spicy Rub Ingredients:

  • 4 tablespoons of paprika
  • 1 tablespoon of chili powder
  • 1 tablespoon of red pepper flakes
  • 2 tablespoons garlic powder
  • 2 tablespoons of onion powder
  • 1 tablespoon of dry mustard
  • 2 tablespoons of fresh ground pepper
  • 1 tablespoon of kosher salt

Sweet Rub Ingredients

  • 1 cup of brown sugar
  • ½ cup of paprika
  • 1 tablespoon of garlic powder
  • 1 tablespoon of onion powder
  • 2 tablespoons of fresh ground pepper
  • 1 tablespoon of kosher salt

Instructions

  1. Choice the rub ingredients, either sweet or spicy rub. Mix the rub ingredients together in a bowl. Rinse pork spare rib racks in water. Pat pork spare rib racks dry with a paper towel. Hand rub both sides of pork spare rib racks with the chosen rub mixture. Coat pork spare rib racks evenly and press rub firmly. Refrigerate pork spare rib racks for at least 2 hours.
  2. Set the grill for indirect heat. On a gas grill, turn off middle burner(s). On a charcoal grill set charcoal to the sides with an opening in the middle. Place racks, meat side down away from heat source. Turn pork spare rib racks every 30 minutes. Cook for approximately 4 hours at 225 degrees Fahrenheit. Adjust cooking time as necessary for different temperatures. Remove pork spare rib racks from grill when done and let ribs rest for 5 minutes before serving.

Serve pork spare ribs with BBQ sauce if desired. Try some grilled vegetables or coleslaw with these tender pork spare ribs. A nice potato salad or fresh green salad would also be a nice compliment. For a good beer paring, try malty red ale with the sweet pork spare ribs to offset the sweetness. To intensify the spices of the spicy pork spare ribs, try a cold pale ale with a hoppy bitterness.
