The first recipe incorporates a rub and puts a nice spicy crust on the outside of the tri tip. The second recipe uses a marinade that adds a unique flavor and creates a juicy and tender tri tip. Both recipes use similar grilling methods that will lock in the flavor and keep the tri tip tender and juicy.
The Secret to a Juicy and Tender BBQ Grilled Tri Tip
The biggest secret for a juicy and tender beef tri tip is to lock in the natural juices. The best method for accomplishing this feat is to sear each side of the tri tip with high heat. When choosing beef tri tip from the butcher, look for some fat marbling through the meat. Some fat marbling will create a more juicer and flavorful tri tip. Tri tip usually comes with a thick layer of fat on one side of the tri tip.
Dry Rub BBQ Grilled Beef Tri Tip Instructions
Ingredients:
3 ½ pound beef tri tip
2 tbsp paprika
1 tbsp garlic powder
1 tbsp dried onion
1 tsp fresh ground black pepper
Mix rub ingredients and hand rub ingredients on all surfaces of the tri tip.
Prepare the grill for direct heat. If using a gas grill set the grill to high heat. If using a charcoal grill use a single layer of dense gray coals to one half of the grill. Oil grill grates to keep tri tip from sticking to the grill.
Sear both sides of the trip tip by placing the tri tip directly over high heat source. This is an important step to sear in the natural juices for a tender and juicy tri tip. Sear both sides of the trip for 4 to 5 minutes. Watch for flare-ups, especially with the fat side down on grill grates. If flare-ups occur, move tri tip to cooler part of the grill until flare up subsides.
Once the tri tip is seared, turn off the middle burner(s) and place trip tip, fat side down in the middle of the grill for indirect heat. If using a charcoal grill, place trip tip on the cool side of the grill for indirect cooking. Continue cooking tri tip with grill lid closed for approximately 1 hour for rare, 1 hour and 15 minutes for medium rare at 350 degrees.
Use a meat thermometer to determine doneness, 140 degrees for rare, 150 degrees for medium-rare. Let tri tip stand for 5 minutes before serving.
Marinated BBQ Grilled Beef Tri Tip Instructions
Ingredients:
3 ½ pound beef tri tip
1 cup soy sauce
½ cup white vinegar
½ cup lemon juice
1 tbsp fresh ground black pepper
1 tbsp garlic powder
1 tbsp dried onion
Mix the ingredients for the marinade. Place tri tip and marinate in a large plastic zip lock bag and make sure tri tip is covered in marinate. Refrigerate tri tip and marinade for at least 4 hours. Occasionally maneuver tri tip to insure that its well covered with marinade. Let marinade and tri tip stand at room temperature before grilling.
