Topped with thousand island dressing, shredded lettuce, pickles, and cheese, ground chicken burgers star in an easy-to-make classic diner-style sandwich recipe.
Ground chicken, widely available in supermarkets today, offers a healthier alternative to ground beef in this interpretation of a favorite multilayered burger. Think of it as a sort of chicken club sandwich.
If the goal is an even healthier burger, feel free to substitute reduced-fat thousand island dressing and low-fat or fat-free cheese in the recipe. The step of buttering and toasting the bun can also be eliminated, and a whole-wheat bun can be swapped for the regular white bun.
On the other hand, lovers of over-the-top burgers can go wild and add a few strips of crispy bacon for a true chicken burger club sandwich. Ground beef may be substituted for the ground chicken; and ground turkey burgers are another option.
Diner-Style Chicken Burgers
Serves 4
Ingredients:
1 1/4 pounds ground chicken
1 small yellow onion, very finely chopped
Salt
Freshly ground black pepper
4 hamburger buns
1/4 cup unsalted butter, softened
6 ounces mild Cheddar or American cheese, thinly sliced
1/2 cup bottled thousand island dressing
3/4 cup very thinly shredded iceberg lettuce
12 dill pickle chips
Directions:
In a mixing bowl, use clean hands to combine the ground chicken and onion thoroughly. Shape the mixture into 8 equal patties slightly larger than the diameter of the buns. Set aside.
Preheat an outdoor grill. Or preheat a large heavy skillet or griddle over medium-high heat.
Before cooking, season the burgers on both sides with salt and pepper.
With a sharp bread knife, cut the thicker half of each bun horizontally in half to make 3 layers of bun.
Carefully grease the grill’s cooking grid; or spray the skillet or griddle with nonstick cooking spray. Cook the burgers until no longer pink in the center, 2 to 3 minutes per side.
Meanwhile, spread the cut sides of each bun slice with butter. As soon as the burgers are done, remove them from the cooking surface to a warmed platter and drape each burger with some sliced cheese. Set aside.
Place the bun slices cut sides down on the cooking surface and cook until lightly browned, no more than 30 seconds per side. Remove from the heat.
Spread the bottom slices of bun with thousand island dressing. Scatter half the lettuce on top and place a chicken burger patter on top of the lettuce. Spread more dressing on both sides of the middle slices and place on the sandwiches. To with the remaining lettuce, remaining chicken patties, and then the pickle chips. Spread a little more dressing on the cut sides of the top slices and place on top to complete the sandwiches. Serve immediately.
