Perfect to serve when company comes, these grouper recipes promise to be special enough to hand down to family and friends for years. Get the grill ready!

Grouper is a hugely popular fish in the warmer climates of the world, especially in the Southeastern U.S. which provides some of the best grouper fishing in the world. Grouper is found in many of the warmer ocean waters including the Atlantic, Caribbean, Gulf of Mexico and the Pacific ocean.

Grouper can be baked, barbecued, deep fried, grilled, pan fried or sauteed. With its firm texture and mild flavor, it stands up to its LARGE reputation. it grows to enormous sizes but the average fish ranges from five pounds to around 50 pounds.

Varieties of Grouper

A variety of grouper can be found in today's oceans. Black, Red, Gag, Snowey, Nassau,Yellowfin, or Goliath (Jewfish) grouper live in the Florida Keys where grouper sandwiches are as plentiful as the sunshine.

Charcoal-Grilled Grouper with Mango Butter

Ingredients for the Mango Butter:

  • 1-1/5 cups white wine
  • 1 bunch fresh mint, chopped
  • 1 small mango, pureed
  • 1 banana, pureed
  • juice and grated zest of 1 orange
  • Cinnamon to taste
  • 3 egg yolks
  • 1 lb butter, softened

Ingredients for the Fish:

  • 4-6 (8-oz) grouper fillets
  • 1/4 cup melted butter
  • Seasoned salt to taste

Directions for the Mango butter:

  1. Combine the wine and mint in a saucepan. Cook until reduced to 1/3 cup. Cool to room temperature.
  2. Combine the mango, banana, orange juice and orange zest in a bowl. Add the wine mixture and mix well. Mix in the cinnamon and egg yolks. Cream the butter in a mixer bowl until light. Add to the fruit mixture and blend well.

Directions for the Fish:

  1. Brush the fish with the melted butter and sprinkle with the seasoned salt.
  2. Grill until cooked through.
  3. Serve with the mango butter.

Serves: Four to Six

Prep Time: 15 minutes, plus cooling time

Cooking Time: 20 minutes

Grilled Grouper Fresca

Ingredients:

  • 4 medium vine-ripened tomatoes, chopped
  • 3 ounces fennel, chopped
  • 2 tablespoons chopped rosemary
  • 2 tablespoons chopped basil
  • 2 tablespoons chopped thyme
  • 3 tablespoons chopped parsley
  • 2 ounces olive oil
  • salt and pepper to taste
  • 8 grouper fillets

Directions:

  1. Combine the tomatoes, fennel, rosemary, basil, thyme, parsley, olive oil, salt and pepper in a bowl and mix well. Let stand at room temperature for 1 hour to blend flavors.
  2. Grill the grouper until it flakes easily. Serve with the tomato fresca.

Serves Eight

Preparation Time: 10 minutes, plus standing time

Cooking Time: 15 minutes

Tip: The skin should be removed prior to cooking grouper due to its strong flavor.

Grouper Fingers

What to do when it's too cold to go outside to grill the grouper? Try this recipe that makes everyone feel like they're in "Margaritaville" along with the rest of the locals. Cheers!

Ingredients:

  • 2 lbs grouper fillets cut into finger-sized strips
  • 1 cup beer
  • 1 cup flour (seasoned with salt, pepper, 2 tablespoons Parmesan cheese)

Directions:

  1. Marinate grouper fingers in beer for an hour in refrigerator.
  2. Dry fish well, pressing between paper towels.
  3. Roll in seasoned flour and throw in saute pan with 1/8 inch olive oil.
  4. Cook for 3 mins. on each side or till golden brown.
