Season a Sausage with this Flavorful Grill Marinade

Marinating a sausage may seem out of the ordinary to some, but adding flavor to Polska Kielbasa really takes it to the next level. Here's a simple way to do it.

Take an ordinary original style Polska Kielbasa, infuse it in a garlic and herb marinade for awhile, and grill it until done to create this flavorful main dish. Marinate some halved sweet onions with the same marinade in a separate bag for a sublime accompaniment.

Marinated Polska Kielbasa

Ingredients:

  • 1 Polska Kielbasa sausage
  • 1 cup olive oil
  • 7 cloves of garlic, minced
  • 1/4 cup red wine vinegar
  • 1/4 cup lemon juice
  • 3 TBSP fresh rosemary, finely chopped
  • 3 TBSP fresh basil, finely chopped
  • 2 TBSP parsley, finely chopped
  • 1 TBSP kosher salt
  • 1 1/2 Tsp freshly ground black pepper

Directions:

  1. In a gallon size ziploc bag, mix together olive oil, red wine vinegar and lemon juice using a whisk.
  2. Add minced garlic, rosemary, basil and parsley.
  3. Season the marinade with kosher salt and fresh ground black pepper.
  4. Seal the bag and shake or mix well, until all the ingredients are thoroughly combined.
  5. Add the Polska Kielbasa sausage to the bag and seal it tightly.
  6. Let the sausage marinate in the refrigerator for 6-8 hours.
  7. Heat outdoor barbecue grill to medium-low heat.
  8. Place the sausage on the grill and cook for 15 minutes, turning frequently to ensure even grilling.
  9. Place sausage on a serving tray and top with grilled sweet onions.

To make the grilled sweet onions, simply use the same recipe for the marinade above and place the sweet onions in a separate gallon sized ziploc bag with the marinade. Place the sealed bag in the refrigerator for 6-8 hours and grill alongside the sausage until done.

This grill marinade is also great on a variety of other meats and vegetables. Try it on sweet corn, zucchini or chicken to add flavor to barbecued fare.

This marinade can very easily be varied to suit each taste. Spice it up by adding finely chopped fresh Anaheim chiles or jalapenos. Sweetin it up by adding a 1/4 cup of brown sugar or honey to the mix. Try different combinations of herbs or different flavors of vinegar. The variations are endless.

Grilling Tips

  • Before grilling, make sure the grill is nice and clean. This will ensure that no flare ups occur which could burn or blacken the meat on the outside.

  • Have tongs readily available for turning the sausage and onions, and have a serving plate nearby when ready to remove the food from the grill.

  • Don't turn the heat up too high on the grill, and don't leave food unattended for more than a few minutes at a time. Walking away from the grill too long causes overcooking or burning. It's best to keep the heat low and let it cook longer than to risk burning it.

This tasty marinated meal of grilled Polska Kielbasa and sweet onions is great when served with cool iced tea and a simple green salad dressed with a creamy dressing. Another idea is to serve the grilled sausage and onions on French rolls topped with a little honey mustard. Versatile and delicious, any way it's served, guests will be wanting to know what makes this sausage taste so good.
